Hospitality

The hospitality industry operates to provide food, beverage, entertainment and accommodation services. Future employment opportunities include positions in hotels, motels, restaurants, clubs, convention and conference centres. The course at Swan Hill International College offers a special blend of formal classroom training with practical placement, at Carriages Restaurant.

The advantage of studying Hospitality at Swan Hill International College is the work opportunities for our students in Swan Hill, a major tourism centre in northern Victoria.

The Diploma of Hospitality at Swan Hill International College has a commercial cookery focus and like many other nationally recognised vocational courses, is based on competency standards developed by the hospitality industry. Students will be doing practical training each week and assessment will occur in our restaurant. The assessment will be conducted by one of our trainers or by our qualified chefs supported by a Workplace Trainer and Assessor. To be passed as competent in the practical area, the student must have an understanding of the supporting knowledge and skill learned in the classroom, and be able to apply this in a hospitality setting.

All levels of operation within the hospitality industry require skilled people.
Our students undertaking the Diploma of Hospitality qualification will be expected to:
• Attend classroom lessons to learn the underlying knowledge and skills.
• Analyse and plan approaches to technical problems or management situations.
• Transfer and apply classroom concepts and technical or creative skills to a range of situations in practical training for two and half days each week.
• Evaluate information, using it in forecasting for planning or research purposes.
• Lead and manage small teams and be responsible for their outcomes.

Course Structure

This nationally recognized course is fully recognized by TAFE and University institutions. The course duration is 12 months for Certificate III in Hospitality (Commercial Cookery) and 12 months for Diploma of Hospitality or 4 semesters over two years, on a full time basis of 20 hours per week. Semester breaks provide plenty of opportunities for our students to gain additional work skills in the hospitality industry. We, however, do recognise previous training and credit transfers may reduce course time.

For each Unit of Competency students must demonstrate success in written tests, assignments, class presentations, practical reports and maintain a learner guide.

Delivery strategy is mixture of classroom and practical training at Carriages Restaurant, under the direction of our qualified chef supported by a Workplace Trainer and Assessor. Students will gain skills to assist them with work opportunities. Training may be modified by the college from time to time, depending on training needs.

Certificate III in Hospitality (068067G)

Certificate III in Hospitality (Commercial Cookery) is industry entry level training and will provide students with the basic skills to work in kitchens of clubs, hotels and restaurants

   

Diploma of Hospitality (068069F)

This course is for people who want to work as a manager in the hospitality industry. You will learn how to plan and control a range of hospitality products, control stock, promote goods and services to customers, maintain premises and outlets, maintain business compliance within legislative requirements, develop and manage financial budgets and develop operational plans. You will also learn how to lead, supervise and manage a team of people.
